Original: Serves 6- 2 tbsp olive oil
- 1 onion, diced
- 4 garlic cloves, sliced
- 1 tsp smoked paprika
- 1/2 tsp chili flakes
- 1 (28 oz) can whole tomatoes
- 2 cans white beans, drained
- 2 cups vegetable stock
- 1 bay leaf
- Handful parsley, chopped
Method

Sweat onion in olive oil over medium heat until soft, about 8 minutes.

Add garlic, paprika and chili flakes and stir for 1 minute.

Crush tomatoes into the pot with your hands. Simmer 10 minutes.

Add beans, stock and bay leaf. Simmer 40 minutes, uncovered, until thick and jammy.

Season, top with parsley and a good drizzle of oil.
