Original: Serves 8- 1 cup extra-virgin olive oil
- 1 cup sugar
- 3 eggs
- Zest and juice of 2 oranges
- 1 1/2 cups flour
- 1 tsp baking powder
- 1/2 tsp salt
- Powdered sugar, to finish
Method

Heat oven to 350°F. Line a 9-inch pan with parchment.

Whisk sugar, eggs and zest until pale. Stream in olive oil.
